Restraining Bolt: The glowing rods roped onto the giants, if the hieroglyphics are anything to go by, were deliberately put on the giants by the precursors as a way to try and control/enslave them. Once all are triggered at once, the "god" gets fully drained of their life force and ends up as a chunk of solid stone. Thus, they all have several runed plates around their body that flash when the heroine approaches and need to be triggered three times each. In a sense, all of the "gods" are this, as they are similar to a Greek legend of a brass giant who could only die if the magma inside it was drained through a vent. And no, farming the same group of enemies by reloading your save will not work as reloading your game also reloads the in game stat counter. So, if you start a new game, it’ll only count your kills once you’ve reached the same number in game as the Achievement counter.
I loaded up my original save and killed a group and the Trophy counter finally updated.

The Trophy counter did not update but the in game counter was working just fine. I started a new game and started killing undead enemies. I was stuck at 44 on my original save file. The in game stat you need to be looking at is “Minions Killed.” The in game stats counter found in the pause menu must be same as your Achievement counter in order for the kills to count toward the Achievement. However, there is a very specific method to get the kills to count despite the patch. The game has been patched to fix the tracking issue. They usually spawn in groups of two or three. As you explore the map you’ll come across enemies that will spawn out of the ground.
